Good Eats

- My good friend Teresa D., who is incredibly crafty, told me about a fun marshmallow flower topper a few weeks ago. I tried it on some cupcakes for Sophia's bday and they turned out great!

Just flatten your marshmallow the long way, (it'll make a rectangle) and cut in the direction of the flattened circle. One marshmallow will make 4 petals. Then dip the sticky sides in sprinkles and attach to the frosting.

I'm thinking of doing a luau for Grace's birthday, using more vibrant colors.



-Yesterday, the girls and I were trolling Main Street, trying to find some food. Nothing looked good. Then Grace noticed the Farmer's Market and asked to stop. It was great! We got some jam and salsa, vegetables, bread and fruit. We brought all our goodies home and made a delicious salad with bread and cold cuts. So much better than $1 burgers!!!
-I've been sick with some mystery virus this week and regretted once again, waiting til the last minute to do my Visiting Teaching. So, Thurs morning, in my delirious fevered state, I decided to just drop off some food with a written message without knocking on the gals' doors.
I found this recipe in my box that my lovely friend Leigh Anne M. gave me years ago. It's a pear cake with lemon icing. I thought muffins would be easier to pack, and they turned out really nice (normally this is made in a bundt pan).
Pear Cake: (preheat 350)
Mix 2C sugar, 3 eggs, 11/2 C of oil. Then add 3C flour, 1 tsp salt, and 1 tsp baking soda. Mix well. Finish off adding 1 tsp vanilla, 3 tsp cinnamon, and 3 grated pears (I used my Vitamixer!). Bake in a greased and floured bundt pan for 1 hour or muffin pan for appx 20 minutes. It made 28 muffins for me.
While the muffins are cooling, in a small saucepan, heat 11/4 powd sugar,4 TBSP milk, and a few drops of lemon extract. If you don't have lemon extract, you can use lemon juice with the grated peel. Just drizzle over the muffins and let cool... or eat them hot and burn the crap out of your mouth like I do.

Too bad you are sick! That pear cake looks delicious - I'm going to try it.

I made Martha's yellow buttermilk cupcakes with fluffy vanilla frosting and they were amazing. The frosting was amazing - 1 1/2 cups butter - beat until fluffy. Then add 4 cups powdered sugar - 1/2 cup at a time. After each two additions you turn the mixer up to high and beat for about 10 secs. Then at the end you beat in 1/2 teaspoon vanilla. I think the extra beating makes it so fluffy.
